"The inspiration for this Pavlova cake was Spring,” says the Brooklyn-based pastry chef and author of the cookbook Pure Artistry. “I’ve been craving warm weather, bright colors, fresh fruit and flowers to decorate cakes (and in life in general). So I layered meringue cakes with bourbon vanilla bean icing and macerated berries, and topped it with kumquats, berries, rose petals, pansies and gold cacao nibs. The more bright and festive the ingredients, the better.  I designed this cake originally for an Easter brunch, but I make it for just about any occasion. I’m waiting for someone to ask me for a multi-tiered pavlova cake for their wedding!” — MG
